At present, the entire process time of airflow drying (also called flash drying) generally used in starch factories is completed in an instant. Therefore, the internal water of starch granules has been dried before gelatinization, so gelatinization or degradation will not occur.
When the wet starch is in contact with hot air, the hot air transfers heat energy to the surface of the wet starch, and then from the surface to the inside.
